Béziers, France, is a town in the south of the country, lying within the Hérault department. The town has a rich and vast history, with development starting as early as the Neolithic age due to its prime spot along the roadway between Provence and the Iberian Peninsula which was frequently used by the Romans for the transporting of goods. The area retains links to its past, with a picturesque old town centre.

The change in weather between January and February in Béziers is noticeable. While the increase in temperature is minimal, around just one degree, bringing lows of 5 degrees Celsius and highs of 13 degrees, it's the dramatic change in precipitation that's the biggest difference. Rainfall drops from a moderate 55 mm to a much lower 28 mm on average. This drier weather typically continues until the April showers make an appearance later in the year.

One of the best preserved historical buildings in the town is the Abbaye de Fontcaude which is a shining example of Romanesque architecture and a reminder of the town's early settlement. The abbey's church was constructed in the 12th Century, and is one of the oldest remaining structures in the Languedoc region. In 1969, the abbey was lovingly restored, removing decades of growth that had rendered many parts of the building inaccessible. Today, visitors can tour the abbey, located north east of the town centre, halfway between Béziers and Narbonne.

Back in the town centre, L'Ambassade is conveniently located in a more modern 19th Century building close to the train station. The restaurant serves up regional Mediterranean and Provencal cuisine. The restaurant is open for both lunch and dinner between Tuesday and Saturday.
